While waiting for Christmas snacks, here is my recipe for Herrasväen pikkuleivät, the Finnish cookies filled with strawberry or raspberry jam.
Being a raspberry lover, my recipe will be raspberry, but you can fill the cookies with whatever you want: spread, caramel, etc.

Melt the butter in a double boiler or in the microwave.
Once melted, mix it with the white sugar and vanilla sugar. Mix with a whisk until it is fluffy.
Then add the egg to the butter and sugar mixture. Beat with a whisk.
Mix together the flour and the yeast.
Then add the flour little by little to the butter + sugar mixture.
Start by mixing with a whisk, then switch to a spatula and finally to your hand. This allows you to knead the dough better.
Let the dough rest in the refrigerator for 1 hour.
First of all, heat your oven to 200°.
Once the dough has rested, roll it out with a rolling pin.
Roll out the dough to a thickness of 3 to 4 millimeters.
Remember to spread the dough on parchment paper or a well-floured work surface. Otherwise you won't be able to peel it off!
With a round cookie cutter, form 40 6-centimeter circles.
Then, on half of them, make an opening with a small cookie cutter. Personally, I chose a small 3cm star but do as you wish!
You can make this hole in the middle or on the side!
Bake your cookies at 200° in a hot oven for 7 minutes
When they come out of the oven, your cookies should be slightly colored and still soft in the middle.
Then let them cool on a rack.
Once the cookies are cool, take a cookie without a hole in it and spread some jam on it. Be generous, your cookies will be better!
Then place a cookie with the hole on top.
Finally, sprinkle a little powdered sugar over the cookies. It's ready!
